Almond Berry Pudding or Milkshake

This recipe would be a great after dinner treat.  Frozen berries will give you the most health benefits, but you might could sub in frozen bananas or peaches.  If you are dairy tolerant, you could use grass-fed heavy whipping cream instead of the coconut milk.  If you want more of a milkshake, either double the coconut milk or add in some almond milk or grass-fed whole milk to thin it out.  Experiment!  

INGREDIENTS:

½ c. full fat canned coconut milk
¾ c. raw almonds (soaked in water overnight, then drained)

1/4 tsp. cinnamon
1/4 tsp. vanilla extract
12 oz. organic frozen berries

DIRECTIONS:

In blender, blend milk and almonds, then add cinnamon, vanilla, and berries and blend until smooth.
