Green Beans With Dressing

Green beansI tend to eat quite a few grean beans (especially when my husband grows them). Green beans aren’t in the top five highest source of any vitamin or mineral, but they do contain lots of vitamins and minerals. The dressing can also be made and used for any veggie or salad.

INGREDIENTS:

1 lb. green beans (blanched if using fresh or lightly heated through if using frozen)
1 Tbsp. olive oil
1 garlic clove, minced or 1/8 Tsp. garlic powder
½ Tbsp. lemon juice
½ Tsp. Dijon mustard
¼ Tsp. lemon zest
Salt and pepper to tast
½ Tbsp. fresh herb of your choice (dill, oregano, basil, thyme, rosemary, etc)

DIRECTIONS:
1. Cook green beans.
2. While beans are cooking, whisk together all other ingredients to make a dressing.
3. Toss warm green beans with dressing until full coated.
