No-Grain Anti-Aging Pancakes

I’ve never been a big pancake eater, but back in the day before I went gluten-free, I didn’t mind to have some pancakes every now and then. Since I’m completely grain free, I haven’t much bothered with gluten-free pancakes. However, I have found these no-grain “pancakes” that also include protein. Another one of my complaints about a standard pancake breakfast is not enough protein. These pancakes have some protein from eggs and almond butter, but they also include anti-aging collagen protein powder. They also include berries which are great for anti-aging by providing lots of antioxidants. Just don’t ruin the healthy goodness of these pancakes by putting cheap bad-for-you pancake syrup on them.
INGREDIENTS:
2 pastured or organic eggs
2 tbsp. Great Lakes collagen protein powder
2 cup organic unsweetened applesauce
1/2 cup raw almond butter
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1/4 c. organic blueberries (or some other berry)
DIRECTIONS:
Mix all ingredients in a bowl. Grease frying pan with coconut oil or grass-fed butter and pour batter in amounts preferred and cook until set, flipping as needed.
