Make Your Own Vegetable Stock

Soups and stews are a good choice for one pot dishes and can be incredibly easy to make and last for days.  You can combine carbs, proteins, and fats all in one dish, and you can eat soups and stews for breakfast, lunch, or dinner.  I recommend that you make your own stock to use in soups and stews.  This recipe is for a vegetable stock you can make on the stove or in a crockpot.    soup

2 Quarts Water

1 Medium Onion, chopped

3 Carrots, shredded or chopped

2 Celery Stalks, quartered

1 C. Leeks, chopped

1 Tbsp. Gluten Free Soy Sauce

3 Tbsp. Fresh Parsley

1 Tbsp. Dried Marjoram

1/2 Tsp. Cayenne Pepper

1/2 Tbsp. Dried Thyme

1 Bay Leaf

Salt & Pepper to Taste

1.  Combine all the ingredients except soy sauce and dry seasonings in large stockpot and bring to low boil.

2.  Reduce the heat to low and simmer 30-45 minutes.  Add soy sauce and remaining seasonings and simmer 5-15 minutes.

*If using crockpot, simmer at least 4 hours.
