Strawberry, Orange, & Chicken Salad

Assorted fruitIt’s strawberry season and leafy greens season, so I thought it appropriate to post a recipe involving both.  This is a great spring or summer lunch (or dinner).  This recipe is enough for two people or for two meals.

INGREDIENTS:

2 Navel Oranges

1 C. Strawberries

¼ Tsp. Cinnamon

1 ½ Tsp. Lemon Juice

1 Tbsp. Olive Oil

¼ Tsp. Salt

Sprinkle of Black Pepper

3 Cups of Leafy Greens

12 oz. Cooked Chicken

 

DIRECTIONS:

1.  Zest one orange and reserve zest (2 t.). Cut peel and pith away from both oranges. Using a paring knife to cut out the   segments, letting them fall into a bowl, along with the juice.

2.  Add strawberries, cinnamon, orange zest to the oranges and toss. Stir in lemon juice and olive oil, and add salt & pepper. Add lettuce and chicken and toss and serve.
