Easy Refrigerator Pickles & Peppers

If you’re like me, you want to make pickles from all those summer cucumbers, but you find canning to be too much work.  This recipe allows you to easily have homemade pickles.  Because these aren’t made from canning, they won’t last as long, but you can keep them in the refrigerator for several days or longer.  You can use both pickles and peppers or one or the other.  cucumbers MGD©

INGREDIENTS:

Cucumbers & Peppers (chopped, sliced, diced, speared, whatever)  *Enough to fit in one pint jar

1 C. Apple Cider Vinegar

1 Tbsp. Brown Sugar

1 Tsp. Each of Coriander, Cumin, and Unrefined Sea Salt

DIRECTIONS:

Boil vinegar, sugar, and seasonings.  Pour liquid over cucumbers and peppers in jar.  Place in refrigerator.
