Carob Avocado Pumpkin Mousse

Sliced Avocado HalfThis is one of my favorite super healthy recipes to make because it seems like I’m getting a treat, yet I know I’m getting tons of vitamins and minerals and antioxidants with the avocado and pumpkin. Plus, I’m getting ginger for good digestion and anti-inflammation and cinnamon for blood sugar regulation and cholesterol lowering properties.

I will note that this does not do that well in a blender, it really needs to be in a food processor. I actually have a food processor attachment for my blender that is good for making a small quantity like this.

Carob Avocado Pumpkin Mousse

INGREDIENTS:

1 Avocado (needs to be ripe and slightly mushy)
1 Can Pumpkin (recommend Farmer’s Market brand in BPA Free can)
2 Tbsp. Carob Powder (I use Chatfield’s)
1 Tsp. Stevia (recommend Stevita or SweetLeaf brand)
1 Tsp. Vanilla Extract (or other flavoring)
1 Tsp. Cinnamon
½ Tsp. Ground Ginger

DIRECTIONS:
Place all ingredients in food processor and whip until smooth.

***If not using avocado, then cut all other spices, etc in half.
