Pineapple Salsa

Pineapple salsa is best when it is made fresh, and it’s great in the summertime when peppers are fresh from the garden.  With the pineapple and the bell peppers, this recipe contains a good amount of vitamin C.  Pineapple contains bromelain which is an enzyme that can increase digestion.  Mint can also be beneficial to digestion for many people.  Cilantro is detoxifying.  So, this recipe has several health benefits.

Pineapple

INGREDIENTS:

¼ lb. Fresh Pineapple, finely diced

2 Tbsp. Red Bell Pepper, finely chopped

1 Tsp. Hot Banana Pepper, finely chopped

3 Tsp. Chopped Fresh Cilantro

2 Tsp. Chopped Fresh Mint

1 Tbsp. Lime or Lemon Juice

 

DIRECTIONS:

In a small bowl, combine all ingredients. Let set for at least 10 to 30 minutes to blend flavors.
