Sardine And Artichoke Salad

Sardines and artichokes are both pretty darn healthy foods, so why not combine them into a tasty salad?!  Sardines are full of good Omega-3 fatty acids and are a good source of protein.  Artichokes have fiber and are a pretty decent source of folate.  They also have powerful antioxidants and are known to support liver and digestive health.

So, for all of you who I’ve told to eat sardines who say you don’t know what to do with them… Here you go!  sardines

INGREDIENTS:

1 Can of Sardines (or Tuna or Salmon)

6 Oz. Jar of Artichokes (drained and chopped)

2 Tbsp. Olive Oil

2 Tbs. Cider Vinegar

¼ Tsp. Garlic Powder

1/8 Tsp. Black Pepper

¾ Tsp. Dried Oregano

2 Green Onions, Chopped

¼ Green Pepper, Chopped

1 Red Pepper, Chopped

 

DIRECTIONS:

  1.  In bowl, whisk together oil, vinegar, and spices.
  2. Add onion, peppers, sardines, and artichokes to blend.
