Skillet Okra & Corn

I’m selling okra and corn at the farmer’s market right now.  I found  a way to combine both into one recipe.  DSCN4693

INGREDIENTS:

1 Lb. Okra, remove ends and cut into ½ inch pieces

2 to 3 Ears of Corn (or 1 c. corn)

1 Medium Onion, chopped (about ½ c.)

4 Medium Tomatoes, chopped

2 Tbsp. Butter

Salt & Pepper to Taste

 

DIRECTIONS:

  1. Steam or boil okra for 10 minutes.
  2. Cut kernels from corn ears to get 1 c. of corn kernels.
  3. Cook chopped onion in butter, until softened.  Add okra.  Cook about three minutes.
  4. Add in tomatoes and corn. Cook on low until veggies reach desired tenderness.
  5. Sprinkle with salt & pepper to taste.
