Waldorf Salad and Yogurt Mint Dressing

I’m always looking for recipes involving fresh herbs when mine are in season in my garden. I found this take on Waldorf Salad using fresh herbs in both the dressing and as garnish. Of course, the dressing can be used for other salads as well.
WALDORF SALAD
Squeeze of lemon or orange juice
3/4 lb. apples, diced
1/2 lb. celery, diced
1/2 c. chopped walnuts
2 tbsp. fresh herbs (your choice: chives, parsley, fennel, dill)
Yogurt & Mint Dressing (see below)
- Squeeze the citrus juice into a bowl
- Toss apples with citrus juice
- Stir in celery and walnuts
- Add dressing and toss
- Garnish with fresh herbs
YOGURT & MINT DRESSING
1 c. fresh mint
1 c. fresh parsley
½ c. fresh chives
1 c. full fat grass-fed yogurt, plain
Zest and juice of ½ lemon
½ tsp. paprika
Drizzle of honey, optional
Salt and pepper to taste
- Pack herbs into food processor with just enough yogurt to make a smooth puree
- Transfer the pure to a bowl. By hand, stir in the remaining yogurt, the lemon zest and juice, the paprika, and the drizzle of honey. Salt and pepper to taste.
