Watermelon & Tomato Salad

This recipe is totally packed with lycopene.  Lycopene is an antioxidant found in both watermelon and tomatoes (giving them their red color).  Lycopene is thought to help prevent certain types of cancers and heart disease.  At time of posting for this recipe, both watermelon and tomatoes are in season.  Ripe Tomatoes

INGREDIENTS:

2 – 3 C. Cubed Watermelon

2 – 3 C. Diced Tomatoes or Cherry Tomato Halves

3 – 4 Oz. Crumbled Feta, Bleu, Gorgonzola, or Goat Cheese

¼ c. Diced Red Onion or Green Onions

¼ c. Nut Pieces or Slivered Almonds or Pine Nuts

1 T. Balsamic Vinaigrette

Sprinkle of Toasted Coconut (optional)

 

DIRECTIONS:

Combine all ingredients in large bowl and serve slightly chilled.
