Chicken & Spinach Scrambled Eggs

I am a proponent of a big protein breakfast.  Eggs are always a good way to start your day and have many health benefits, but some of us need additional protein beyond two or three eggs.  Adding meat to your scrambled eggs gets you additional protein to keep you satisfied throughout the day and not snacking before lunch.  Egg

 

3 Pastured Eggs (or at least organic)

2 Ounces Cooked Chicken (or other meat, if desired)

3/4 C. Chopped Spinach (I use frozen, thawed out, rather than fresh)

1 Tsp. Chopped Fresh Basil

1 Roma Tomato, Chopped

Chopped Onion & Bell Pepper, if desired

Salt & Pepper to taste

1 Tbsp. Grass-Fed Butter

 

  1.  In mixing bowl, whisk eggs until frothy.  Add in all other ingredients and stir and blend well.
  2. Melt butter in skillet on medium heat.  Add egg mixture.  Gently scramble until cooked through.
  3. Enjoy scrambled eggs with sliced avocado.
