Spicy Lime Chicken & Veggies Salad

I think I’ve noted before that I’m not big into regular lettuce based salads, but I do like salads on occassion.  Salads are a good way to combine protein, fat, and veggies.  I just like salads that are not so “traditional”.  Just add a baked sweet potato on the side to this salad and you’ve got a full meal.  Lime

Salad:

2 C. Cooked Chicken (or Steak), Chopped

1/4 C. Chopped Fresh Cilantro

1 C. Chopped Tomato

1 Medium Avocado, Chopped

1 Small Yellow Squash, Chopped

Leaf Lettuce, Optional

Combine all ingredients in large bowl.

Dressing:

1/4 C. Lime Juice

2 Tbsp. Olive Oil

1/2 Tbsp. Honey

1/2 Tsp. Chili Powder

1/4 Tsp. Ground Cumin

1/4 Tsp. Salt

Shake all ingredients in tightly closed container.

Pour dressing over salad.
