Butternut Squash Puree

This recipe makes a nice winter side dish.  Butternut is on sale now in my area, so it’s a good time to stock up.  Butternut keeps well for quite awhile.  You could also serve this puree warm after heating it in some coconut oil.  The fat will help you better absorb the nutrients.  Butternut is loaded with beta-carotene, vitamin E, and potassium.  Butternut

INGREDIENTS:

1 Medium or Large Butternut Squash

1Tbsp. Cinnamon Powder

¼ Tsp. Nutmeg

¼ C. Applesauce

 

DIRECTIONS:

  1. Bake butternut squash. See directions here.  *This is how to cook spaghetti squash, but basically the same.
  2. Place cooled, peeled, seeded butternut squash in food processor and puree.
  3. Place puree in bowl and blend in cinnamon, nutmeg, and applesauce.
