Chewy Cherry (or any berry) Truffles

Truffles are popular (because they are so tasty!), and they can be pricey to get really good quality, clean, organic ones.  So, you could just make your own.  With the holidays upon us (at the time of posting), now is a great time to make some homemade truffles to give as gifts or to serve at a party.  Chocolate

Ingredients:

6 or 7 Pitted Medjool Dates

1/2 C. (packed) Dried Cherries (or Dried Cranberries or other Dried Berries)

2/3 C. Raw Almonds

1/3 C. Nut(s) of Choice

1-2 Tbsp. Water

Directions:

Combine dates, cherries, and nuts in food processor.  Process for 1-2 minutes, scraping down sides as necessary.  Mixture will come apart, crumble, and should finally start rolling up into “dough” in the food processor.  If it does not start holding together, than add water as necessary.  Once ingredients do stick together, make dough into balls (your choice on size).

You could dust these with some cacao powder if desired or sprinkle some really fine shred coconut on them (or add a little coconut when processing).
