Hot Spinach & Artichoke Dip (or Side Dish)

I made this recipe for Christmas 2014 and really loved it.  Mine turned out a bit thick, and while others did use it as a dip with tortilla chips, I ate it as a side dish.  I also have found it to be great as a leftover.  I have combined it with canned salmon for a lunch dish.    atichoke_dip

INGREDIENTS:

14 Oz. Can Artichoke Hearts, Drained  *I used a bag of frozen hearts (thawed) from Trader Joe’s

10 Oz. Package of Frozen, Chopped Spinach, Thawed & Drained

1/3 C. Grated Romano Cheese

1/4 C. Grated Parmesan  * I was out of Parmesan and used extra cheddar

1 C. Shredded Cheddar (or other cheese of choice)

1/3 C. Heavy Whipping Cream

1/2 C. Sour Cream

1/2 Tsp. Minced Garlic   *I used garlic powder, and I may have used a full teaspoon, can’t remember

1 Tsp. Each of Salt and Black Pepper

Add Ins: Chives or Other Fresh Herb, Onion, Cayenne, Red Pepper Flakes

 

DIRECTIONS:

  1. Preheat oven to 350 degrees.  Grease (with butter) a 9 x 13 baking dish or baking dish of similar size.
  2. In a food processor (or blender), grind up artichoke hearts to desired consistency.
  3. Combine chopped artichoke hearts with all other ingredients in baking dish.  Blend completely.  Sprinkle extra cheese on top, if desired.
  4. Bake for 20-25 minutes.
