Hot Spinach & Artichoke Dip (or Side Dish)

I made this recipe for Christmas 2014 and really loved it. Mine turned out a bit thick, and while others did use it as a dip with tortilla chips, I ate it as a side dish. I also have found it to be great as a leftover. I have combined it with canned salmon for a lunch dish.
INGREDIENTS:
14 Oz. Can Artichoke Hearts, Drained *I used a bag of frozen hearts (thawed) from Trader Joe’s
10 Oz. Package of Frozen, Chopped Spinach, Thawed & Drained
1/3 C. Grated Romano Cheese
1/4 C. Grated Parmesan * I was out of Parmesan and used extra cheddar
1 C. Shredded Cheddar (or other cheese of choice)
1/3 C. Heavy Whipping Cream
1/2 C. Sour Cream
1/2 Tsp. Minced Garlic *I used garlic powder, and I may have used a full teaspoon, can’t remember
1 Tsp. Each of Salt and Black Pepper
Add Ins: Chives or Other Fresh Herb, Onion, Cayenne, Red Pepper Flakes
DIRECTIONS:
- Preheat oven to 350 degrees. Grease (with butter) a 9 x 13 baking dish or baking dish of similar size.
- In a food processor (or blender), grind up artichoke hearts to desired consistency.
- Combine chopped artichoke hearts with all other ingredients in baking dish. Blend completely. Sprinkle extra cheese on top, if desired.
- Bake for 20-25 minutes.
