Raw Cacao Truffles (with nuts & coconut – yum!)

I just posted a recipe for Chewy Cherry Truffles, but since truffle-like desserts are so awesome, here’s another truffle recipe.  Chocolate

Ingredients:

1 C. Raw Cashews, soaked for at least 20 minutes (and drained)  *Could try to sub in another nut or do a nut mixture

1/3 C. Raw Honey

1/2 C. Raw Cacao Powder

1/2 Tsp. Vanilla Extract (or other flavoring of choice)

1/8 Tsp. Sea Salt

1/4 C. Dried Coconut

Directions:

1.  Combine nuts and honey in food processor, process until smooth.  Add cacao, vanilla, and salt and process.  Add in coconut, then process.

2.  Place “batter” in freezer for about 20 min.  Remove and form into balls.

3.  Roll balls through coating(s) of choice, then refrigerate or eat immediately(!).  Coatings include nuts, coconut, cacao powder, cacao nibs, orange zest, grated chocolate bar pieces.
